Bacteria used to ferment dairy products increases antioxidant activity, researchers say. Researchers reporting in the January 2007 edition of the Journal of Applied Microbiology reported that the antioxidant activity of dairy products is increased by the fermentation process. This information sheds some light on the amazing benefits of regular yogurt and kefir consumption.
